  1. Heat your oven to 475˚F with a pizza stone. Heat olive oil in a small skillet. Add the garlic and fry until the garlic is golden. Remove from heat and let rest until ready to use. Before using, remove garlic.
  2. Prepare the pizza topping. Thinly slice the peaches and grate the mozzarella cheese.
  3. On a good non-stick surface (like a pizza peel sprinkled with cornmeal), stretch and roll the dough into a circle roughly 12 to 14” in size. Spread the garlic-infused olive oil over the pizza dough then layer with the thinly sliced peaches, grated mozzarella cheese, and crumbled blue cheese.
  4. Transfer the pizza to a pizza stone and bake until the cheese has melted and the crust is golden.
  5. Remove the pizza from the oven and drizzle with honey and sprinkle with julienned basil.

  1. Slice the peaches into 8, and peel each slice.
  2. Place peach slices in the bowl of a food processor, along with sugar and process until smooth, scraping down the sides as you go.
  3. Once smooth, add lemon juice to taste.
  4. Freeze for 6-7 hours, or until firm.
Recipe Notes

Don't add all of the lemon juice in at once - you need to add it to taste. It also may seem like a strange ingredient, but it really brings out the flavour of the peaches.

The ratio of fruit to sugar you are looking for to get the right consistency is basically 4:1 fruit to sugar. Work this out by weight. Weigh the sliced & peeled fruit, then divide it by 4, which is the amount of sugar you add.

In this recipe, the sliced peaches weighed 800g, so divide that by 4 and you get 200g.

If you want to scale the recipe up or down, it should still be a good consistency as long as you stick with that ratio of 4:1 fruit to sugar.

  1. Preheat oven to 400 degrees F
  2. In a large saucepan combine 1/2 cup sugar, cornstarch, and cinnamon.
  3. Stir in peaches and lemon juice, tossing until peaches are evenly coated.
  4. Cook filling over medium heat, stirring constantly until mixture thickens and boils. Boil 1 minute.
  5. Pour mixture into an ungreased 2 quart casserole dish. Keep mixture hot in oven while you make topping.
  6. TOPPING:
  7. In a medium bowl combine flour, 1 tablespoon sugar, baking powder, and salt.
  8. Mix thoroughly, then cut in shortening until mixture looks like fine crumbs.
  9. Add milk and stir until mixture is evenly moistened.
  10. FINAL STEP:
  11. Remove peach filling from oven and drop dough onto peaches in 6 equal-size spoonfuls.
  12. Return cobbler to oven and bake 25 to 30 minutes or until topping is golden brown.

  1. Combine peaches, sugar, and lemon juice in bowl; mix well.
  2. Let stand for 20 minutes.
  3. Drain, reserving juice.
  4. Add enough water to reserved juice to measure 1 cup.
  5. Pour juice into saucepan.
  6. Stir in cornstarch gradually.
  7. Cook until transparent, stirring constantly.
  8. Cool.
  9. Spoon peaches into tart shells.
  10. Pour juice syrup over peaches.
  11. Chill until glaze is set.

  1. Halve the peaches, remove pits.
  2. Drizzle with about 2 teaspoons of the lemon juice. Cover with plastic wrap and set aside.
  3. In a small saucepan, combine vinegar, brown sugar, remaining lemon juice and black pepper.
  4. Boil until reduced by about 1/2.
  5. Place peaches cut-side down on a hot lightly oiled grill.
  6. Cover and cook for about 2 minutes, or until there are grill marks.
  7. Turn over and baste the cut sides with the vinegar mixture.
  8. Cover the grill and cook for about 3 more minutes, or until softened.

  1. In a medium saucepan, prepare syrup. Bring the sugar, water, lemon juice and zest to a boil. Lower to a simmer and cook for 10 minutes.
  2. Poach apricots or peaches until tender. (Tip: if you use peaches, remove the skin.) Let them cool in the syrup.
  3. To prepare raspberry sauce, in a blender, combine the raspberries, sugar and lemon juice. Process to a puree.
  4. Remove fruits from syrup.
  5. To serve: In a small bowl, place a scoop of vanilla ice cream, place the fruit on top, and cover with raspberry sauce. Garnish with whipped cream and toasted almonds.
