Instructions
  1. Boil the grape juice in a large saucepan until reduced by about half
  2. Add the pears, persimmons, cinnamon & cloves
  3. Simmer gently, covered for most of the time, for at least 1 hour (break the fruit into little pieces when it is soft), until the fruit falls apart and the liquid has the consistency of syrup
  4. If you like, add walnuts (but make sure they are not stale), or other nuts like hazelnuts or almonds
  5. Serve with roasted meats or your favorite cheese

Persimmon and Cheese Crostini

Instructions
  1. Preheat oven to 375°F
  2. Place slices of baguette on a rimmed baking sheet, drizzle lightly with Olive Oil
  3. Toast until dry and lightly golden, remove and cool
  4. Heat 1 tablespoon of Olive Oil in a pan over medium heat
  5. Add thinly sliced crosswise persimmon slices to pan, and lightly sauté just until soft
  6. Top each piece of baguette with 1 slice of persimmon and 1-2 teaspoons of cheese
