Ingredients

seeded and chopped English cucumber

chopped or torn in small pieces

salt
to taste
black pepper
to taste
Servings:
Instructions
In a large bowl, toss watermelon and cucumber with mint, lime juice, salt, and pepper. Serve immediately.
If not serving immediately, leave out the salt. Refrigerate salad, covered, up to four hours. Just before serving, toss with salt.

crumbled feta cheese

minced red onion

white balsamic vinegar

tablespoon
olive oil

tablespoon
frozen mango juice concentrate, thawed
Servings:
Instructions
Combine the baby greens, mango, watermelon, mint, feta cheese and minced onion in a mixing bowl.
Whisk the vinegar, olive oil, and mango juice concentrate together in a small bowl, and pour over the salad.
Toss gently to evenly coat.

freshly squeezed lime juice

ripe watermelon, cut in half, and halved again
mint sprigs, for garnish

Instructions
Place lime juice and honey in a saucepan.
Bring to a boil and let boil for 2 minutes.
Remove from the heat and chill.
Place watermelon slices on a large platter and drizzle with the lime syrup and garnish with mint.

Ingredients

orange juice

extra-virgin olive oil

ripe tomatoes, peeled and cut into 1/2-inch dice, with their juice, or 1 1/2 cups diced (1/2 inch) canned tomatoes with their juice

small yellow bell pepper, seeded and cut into 1/4-inch dice
1
small onion, cut into 1/4-inch dice
2
medium garlic cloves, minced
1
small jalapeno pepper, seeded and minced (optional)

fresh lime juice

Salt and freshly ground black pepper
Servings:
Instructions
Process 1/2 cup of watermelon, along with the orange juice and oil, in a blender or food processor until pureed.
Transfer to a medium bowl, along with remaining ingredients.
Season with salt and pepper to taste. Refrigerate until ready to serve. (Can be made several hours before serving.)
