Chef Lindsey grew up in Vacaville, graduating from Vacaville High School. After a degree in business from Humboldt State University, she felt a need to explore the culinary arts, and so she did, graduating from the Napa Valley Cooking School in St. Helena. She worked for over two years for the Solage Resort in Calistoga at Solbar, a Michelin Star restaurant. She later also worked doing catering for her father’s wine business “Gilpin Wines”. She dreamed that she might one day have her own restaurant.
Chef Lindsey is married to Rico Chelini the Winemaker for Mario Andretti Winery in Napa. Rico has a long family history of winemaking in Napa Valley and is a huge fan of Suisun Valley and Chef Lindsey’s biggest supporter.
Mankas BackDoor Grill is now open. When asked about her plans for the location going forward, Chef Lindsey replied “I’d just like to freshen things up a bit, fresh flowers, new menu items and a whole new outlook on how to sustain Mankas for the community and visitors alike. Of course, we will keep the famous “Lobster Bisque” and Frank’s “Hungarian Dry Rub Ribeye” along with some amazing new entrées!”
Being a Vacaville and Solano native, Chef Lindsay Chelini has been deeply involved in the Vacaville and the surrounding communities of Solano County for her whole life. She plans to work very closely with the local wineries, orchards and olive producers in Suisun Valley. Also, to work closely with our local charities such as hospice and local healthcare organizations.
